Grilled Goat Ribs
(Source of recipe: Shady Grove Farm) • SERVES 10
INGREDIENTS:
1 section goat ribs, cut into 4 pieces
4 cloves garlic, peeled & chopped
8 sprigs fresh rosemary
Salt & pepper
Olive oil to cover
COOKING:
Up to 24 hours ahead, place ribs in shallow ovenproof dish, sprinkle with seasonings and cover with olive oil.
Cover with plastic wrap and marinate overnight or till grill is ready.
Over hot coals, quickly sear ribs very brown on both sides.
Return to dish, cover with foil and bake in 350 oven 15 to 30 minutes.
Serve with brown rice, salad with vinaigrette, and a spicy fruit chutney.
